For 20 years, sen-ryo has upheld the “Shokunin Spirit” and provided customers authentic regional dining experiences created with ingredients shipped directly from the source. From selecting quality Japanese seasonal seafood and delicious sakes, creative and ingenious preparations of precious ingredients to expert craftsmanship, sen-ryo has seen to the creation of top-notch dishes. We will steadfastly adhere to our fundamental Shokunin approach to offer customers the finest delicacies and most unforgettable culinary experiences created by sen-ryo Shokunin. Following the popularity of Phase 1, which featured Japanese raw oysters, we will be presenting a series of “Shokunin Sushi” during Phase 2 of the sen-ryo 20th Anniversary Shokunin Festival, with smoked sushi as the featured flavour experience. The finale of the Festival, Phase 3, will be launched in the second half of May, so please stay tuned for what we have in store for you.
“Phase 2 of the sen-ryo 20th Anniversary Shokunin Festival” will be held in two stages at all sen-ryo branches. This “Shokunin Sushi” series adopts an innovative sushi style featuring smoked sushi. sen-ryo shokunin flavour sushi with smoked applewood chips, allowing the aroma to penetrate the ingredients to create a rich, layered flavour that brings out the essence of the ingredients. Not only does it perfectly demonstrate the craftsmanship of the shokunin but also offers a fresh experience for gourmands who pursue novel flavours.
The first stage from 3 to 30 April will feature four specialty sushi for a limited time; these include Smoked Prime Fatty Tuna Sushi with Foie Gras, Snow Crab Leg Sushi with Yuzu Jelly, Seared Red Shrimp Sushi with Bottarga, and Horse Mackerel with Yuzu Pepper Scallion Paste. The Smoked Prime Fatty Tuna Sushi with Foie Gras is a must-try. The prime fatty tuna, rich and plump with no sinew that melts in your mouth, is paired with seared foie gras to create a rich mouthfeel. The light mellow aroma and acidity of red wine balances the rich flavour of the foie gras flakes, and the tuna belly is smoked with applewood chips to enhance the aroma. The light woody fruity aroma that is released from the applewood chips during the smoking process further elevates the umami experience.
The second stage will be available from 1 to 28 May and will include Smoked Japanese A4 Wagyu with Caviar, Seared Black Cod with Cod Liver Paste, Live Surf Clam, and Red Wine Marinated Tuna with Foie Gras. One of the highlights of this series is the Smoked Japanese A4 Wagyu with Caviar Sushi made with carefully selected Japanese A4 Wagyu famous for its delicate texture and marbling. Shokunin smoked Japanese A4 Wagyu with applewood chips, adding a woody fruity aroma. The tender and juicy beef is combined with the savoury fragrance of French caviar and embellished with luxurious gold foil to add a sense of extravagance to the whole dish. Progressing from a feast for the eyes to a feast for the tastebuds, the light smoky wood aroma permeating the Wagyu beef is a multi-sensory delight in one bite.
Limited three sakes and desserts + Special Sake Tasting Flight
To offer guests the perfect dining experience, we are presenting three sakes known for their unique fruity aroma in the sen-ryo Special Sake Tasting Experience. These are brewed from Yamada Nishiki sake rice produced in Tochigi Prefecture and they all share a light fruity aroma and moderate sweetness. From the selection of rice to the fermentation process, every detail demonstrates the shokunin pursuit of fine wine. Diners can enjoy three 45ml glasses of sake and we recommend starting with the Sanran Junmai Ginjo with its umami-rich rice flavour and rich and smooth palate. Next to savour on the flight would be the Sanran Yamahai Junmai, which has an invigorating fruitiness and long finish, then finally the sen-ryo Shokunin Junmaidaiginjo with a delicate sweetness that subtly combines the fruity aromas of pineapple and melon with a rich rice aroma. Pairing these three sakes with various sushi and sashimi can further draw out different flavours from each dish.
Dessert is undoubtedly a vital element in concluding this meal. Shokunin Handmade Warabi Mochi with “Tenku No Matcha”, crafted with utmost care by shokunin, this exquisite warabi mochi presents a delicate, silky smooth texture with delightful chewiness. Pairing it with aromatic soybean flour to enhance the mochi’s silkiness or savor it alongside your choice of “Tenku no Matcha” matcha powder or premium black honey, which perfectly complement the fresh, nuanced flavor. Filled with luxuriously smooth red bean paste and chewy mochi balls, each bite evokes the essence of traditional Japanese confectionery. Sipping the “Tenku no Matcha” alongside, enchanted by its elegant, deeply flavorful aroma that beautifully balances the warabi mochi’s delicate sweetness.
